Etymology

From Middle Dutch sukereye, a folk etymological interpretation of chicorei, from Old French cicoree, from Late Latin *cichōria, from Latin cichōrium, from Ancient Greek κιχώριον ‎(kikhṓrion). Forms doublets with chicorei and cichorei. Synchronically equivalent to suiker ‎(“sugar”) +‎ -ij ‎(“a suffix that forms abstract nouns”).

Cognate to English chicory and succory, the latter being a borrowing from the same Middle Dutch source.
