From Proto-Slavic *bъrščь, first meaning “hogweed”, then “hogweed soup”, later “beet soup”, from Proto-Indo-European *bhṛsti̯o-. Compare Sanskrit भृष्टि (bhṛṣṭi, “sharp point, prong, edge”), German Borste (“bristle”), Bürste (“brush”), English bur, bristle.
