Possibly[1] a Mediaeval back-formation from the Late Latin adjective organizatus (“organised”), by analogy with Late Latin borrowings of Greek verbs in -ίζω (-ízō), from Classical Latin organum (“implement, instrument, engine”), from Ancient Greek ὄργανον (órganon), from ἔργον (érgon, “deed, labour, work”), from Proto-Indo-European *wérǵom, whence English work.
